Vegan Gluten-Free Cookies, version 2

I promise not to turn this into a baking blog, but I’m trying to come up with a recipe for Christmas cookies that everyone in my family can eat (mother with celiac, brother with milk and tree nut allergies, vegan sister-in-law).

Version 1 of these cookies was from mydarlingvegan.com but was too weird for everyone except my sister-in-law.  So I added extra sugar and oil.  There’s still a little cakey for my taste, but I’m working on it.

2 cups quick oats

½ cup virgin coconut oil

½ cup crunchy peanut butter

1 cup ripe banana

½ cup sucanat

½ cup chocolate chips

¼ tsp salt (if the peanut butter is unsalted)

Mix and drop spoonfuls onto parchment paper. Bake for ~15 minutes at 350 deg.
